Chicken Club Roulades

Taste of Home Magazine from the Joplin, Missouri Show.
Page 14 of Rise and Shine Magazine.
Collection of items needed to prepare Chicken Club Roulades.
Heating skillet - since we are cooking bacon which has fat we are not adding oil.
Prepared sauce.
We choose to use chicken instead of turkey so we pounded out the chicken to make it easier to roll.
Pampered Chef mallet.
Chicken breast covered with sauce. With a thin turkey breast one tsp but the chicken was a little thicker so we added more sauce.
Ham is added.
Provolone cheese.
Blanched asparagus
Rolling the roulade.
Ending the rolling of the bacon.
Ready for the frying pan.
Adding the poultry seasoning.
Cooked Chicken Roulades.
Served with a light salad.

Raspberry-Chocolate Meringue Squares

Finished piece - picture perfect
Simple and Delicious Magazine from Joplin, Missouri Show

Egg whites coming to room temperature. Set oven at 350 degrees for the crust. Later change to 400 degrees.
Collection of items needed to make Meringue Squares.
When you have it use it - dough mixer.
Patting it down to make the crust. I would add more melted butter or perhaps add almond extract to the crust for better flavor.
Making the meringue. We added corn starch just to see if it would help stiffen meringue also.
Adding the raspberry jam.
Pouring on the miniature semisweet chocolate chips. I would change these to sweet chocolate chips to help sweeten the raspberry jam.
Adding the whipped egg whites.
Picture Perfect.
